Baking Adventures: Mini Pumpkin Cheesecakes

So to further prove my love for cheesecakes, I dedicate this Sunday's Baking Adventures post to another cheesecake recipe! Pumpkin Cheesecakes!

The recipe I used comes from Joy of Baking (the recipe is for a full eight inch cake, I simply divided the filling and crust into ~22 individual cupcake cups). This variation on the classic cheese cake is super flavorful because of all the wonderful spices added, I think it is perfect for the fall time, but for cheesecake lovers, this is great all year round!

Made a batch for my mom's work party.

Instead of topping mine with another layer layer of cream cheese as suggested in the recipe, I topped mine with a half of a strawberry and some drizzled chocolate.
